Roasted Baby Rainbow Carrots with Carrot Top Pesto


1 lb. Harvest Sensations Baby Peeled Rainbow Carrots
3 garlic cloves
Fresh thyme sprigs
1/4 cup olive oil
Salt & pepper

Pesto Ingredients:
3 tbsp Macadamia nuts
3 garlic cloves (roasted)
Fresh carrot tops from other carrots
1/4 cup Harvest Sensations fresh basil
Salt & pepper
1/4 cup olive oil


Set oven to 400. Remove tops from carrots and set aside for pesto. Add carrots for roasting, garlic cloves, fresh thyme sprigs, salt and pepper to a baking sheet. Drizzle with olive oil and toss to coat completely. Once the garlic has roasted in the oven with the carrots (about fifteen minutes) remove from the oven and set aside for pesto.

To a food processor add macadamia nuts and roasted garlic cloves and pulse until a paste forms. Add fresh basil, fresh carrots tops, salt and pepper to the food processor and while blending, slowly add the olive oil. Drizzle pesto over carrots or serve on the side.
