Understanding Heat Before You Order

Capsaicin sits in the pith and seeds, not the flesh, so the same pepper can read mild or fierce depending on how it is cut. Heat also swings with growing stress: a hot, dry season pushes Scoville values up across the board. That is why we treat heat as a range, not a number, and why a kitchen running a fixed recipe should taste each new lot rather than assume it matches the last one.

Storage and Food Safety

Most chilies hold two to three weeks at 45–50°F. Refrigerating them colder than that causes chilling injury — pitting and soft spots that show up days later. Anyone handling large volumes of hot chilies should be gloved; capsaicin transfers to skin and eyes and does not rinse off with water.
