Selection and Storage

Choose firm, heavy fruit with intact skin and no bruising at the shoulders — that is where damage shows first. Ripeness is signaled by aroma and background color, not by softness; an Asian pear that has gone soft has gone over. Hold at 32–35°F, where the fruit will keep for several weeks to a few months depending on variety and arrival condition. They hold at room temperature for about a week.

Their crunch and high water content make Asian pears a natural in raw applications: sliced into slaws and salads, matchsticked into Korean dishes, or grated into bulgogi marinade, where the enzymes tenderize the beef. They hold their shape when poached or baked and do not collapse into sauce the way a European pear will.
