Mango is the most consumed fruit on earth and one of the few tropicals that sells equally hard in a taqueria, a hotel breakfast buffet, a smoothie program and a retail display. Mango Varieties and What They Are For
- Tommy Atkins — red-blushed, firm, fibrous, and the most durable in transit. The volume variety for cut fruit programs and retail displays.
- Ataulfo (honey mango) — small, golden, nearly fiberless, with a rich custard texture. The chef’s mango and the one that wins blind tastings.
- Kent — large, juicy, low fiber, excellent for slicing and dicing at volume.
- Keitt — stays green when ripe, which confuses buyers who judge by color. Late-season, large and sweet.
Ripeness: The Only Thing That Matters
Mango does not get sweeter after harvest, but it does soften and develop aroma. Judge by feel and smell, never by color — a green Keitt can be perfectly ripe and a fully red Tommy Atkins can be rock hard. A ripe mango gives slightly at the stem end and smells fruity there. If it smells fermented or alcoholic, it is past.
Order green-ship fruit if you have a ripening room or several days of runway; order ready-to-eat if it goes straight to the cutting board. Mixing the two in one case is the most common cause of shrink in a mango program.
Storage and Handling
Hold hard mangoes at room temperature until they yield to gentle pressure, then move them to 45–50°F where they will hold three to five days. Never refrigerate a hard mango — chilling injury stops ripening permanently and leaves grey, pitted flesh. Cut mango holds two to three days refrigerated.
Nutrition
Mango is an excellent source of vitamin C and vitamin A, provides fiber, vitamin B6, folate and copper, and is naturally fat free, cholesterol free and very low in sodium.
