Grades and Formats
- Jumbo — the largest grade, the one for stuffing, bacon-wrapping and retail display.
- Large — the volume grade for chopping, blending and bulk applications.
- Pitted — labor removed, the right call for high-volume prep and manufacturing.
- Unpitted — better texture retention and longer hold; preferred for display and stuffing.
What Quality Looks Like
A good Medjool is plump, glossy, and wrinkled rather than shrunken, with skin that gives under light pressure. White crystalline patches on the surface are sugar coming out of solution, not mold — they are harmless and a sign of a genuinely sweet date. Dry, hard, cracked fruit has been stored badly or too long.
Storage
Dates are shelf-stable but not indefinitely. At room temperature they hold about a month; refrigerated at 34–40°F they hold six months or more, and frozen they hold a year with no meaningful quality loss. Keep them sealed — dates absorb odors aggressively and will taste like whatever is next to them.
In the Kitchen
Stuffed with goat cheese and wrapped in bacon, blended into date paste as a refined-sugar replacement, chopped into tagines and grain salads, or blended into smoothies and date shakes. In food manufacturing, date paste is one of the most common clean-label sweeteners, which is why bar and snack producers buy Medjool by the pallet.
