Whole Fruit or Arils?

Whole fruit is cheaper per pound and holds for weeks, but seeding is genuinely labor-intensive — budget several minutes per fruit and expect stained aprons. Ready-to-use arils cost more per pound and hold days rather than weeks, but they arrive at 100 percent yield with zero labor. For most kitchens the arils win on plate cost once prep time is counted honestly.

Season and Sourcing

The domestic California crop runs roughly October through January, which is why pomegranate feels like a holiday item in the United States. Import fruit from the Southern Hemisphere extends availability well past that window, which is what makes a year-round program possible rather than a three-month one.

Selection and Storage

A good pomegranate is heavy for its size with taut, leathery skin. Weight signals juice; a light fruit has dried inside. Surface scarring and irregular shape are cosmetic and do not affect quality — some of the best fruit looks rough. Whole pomegranates hold two to three weeks at room temperature and up to two months at 40–45°F. Fresh arils should be kept at 34–38°F and used within about five days.

In the Kitchen

Score the fruit around its equator and open it under water — the arils sink, the membrane floats, and nothing sprays. Arils go into salads, grain bowls, yogurt, cocktails, roasted vegetables and desserts. The juice reduces into molasses for Middle Eastern dishes.

Nutrition

Pomegranate arils are a good source of fiber, vitamin C, vitamin K and potassium, and contain the polyphenols the fruit is best known for. Naturally fat free and cholesterol free.
