Wholesale Mixed Baby Lettuces
A good baby lettuce mix is built, not bagged at random. The blend needs soft leaf for volume, a sturdy leaf for structure, red leaf for color and something with a little bite to keep the salad from tasting like water. Our mix runs green and red oak, green and red romaine, tango and lollo.
What Separates a Good Mix From a Cheap One
Leaf size consistency and the ratio of soft to sturdy leaf. A mix that is mostly soft leaf looks generous in the case and collapses the moment it is dressed. A mix with too much romaine eats like a chopped salad. The right blend holds a vinaigrette for the length of a service.
Handling
Baby leaf is nearly all water with almost no protective cuticle. Hold at 34–38°F with high humidity, never in direct fan airflow, and never near ethylene producers — apples, melons, bananas and tomatoes will brown leaf edges within a day. Keep bags closed until service.
Do Not Re-Wash Washed Product
Re-washing pre-washed greens in a kitchen sink adds water the leaf cannot shed and reintroduces handling. If leaves must be refreshed, a brief ice bath followed by a proper spin is the only acceptable method, and the salad should be used immediately after.
Dressing
Dress at the last possible second and use less than feels right — baby leaf carries dressing far more efficiently than romaine or iceberg. Season the leaves with salt directly rather than relying on the dressing to do it.
Nutrition
Baby lettuces provide vitamin A, vitamin K, folate and fiber at very low calorie density. Fat free, cholesterol free and low in sodium.
