Marble potatoes are small round potatoes graded to a tight size, usually under an inch and a half. The point is uniformity: every piece cooks in the same time, plates at the same size and needs no cutting. For catering, banquet and high-cover operations that is worth more than the flavor difference between varieties.

Assorted Colors

Red, yellow, purple and white in one pack gives a plate or a hotel pan visual variety with a single SKU and a single cook time. Purple potatoes fade somewhat when boiled and hold color better when roasted, so roast if the color is part of the presentation.

Selection and Storage

Firm potatoes with smooth skin, no sprouts, no green and no soft spots. Because marbles are small, the skin-to-flesh ratio is high and any skin defect is proportionally more significant. Store cool, dark and ventilated at 45–50°F, never refrigerated, never bagged in plastic, and away from onions.

Cooking Notes

Roast whole with oil and salt, boil and toss with butter and herbs, skewer for grilling, or par-boil then smash and crisp. Because they are waxy and small they cook fast and they overcook fast — check earlier than instinct suggests.

Nutrition

A good source of potassium, vitamin C and vitamin B6, with fiber in the skin. Fat free, cholesterol free and very low in sodium.
