Green asparagus is available essentially year-round across the Peruvian, Mexican and domestic seasons. What changes week to week is which origin is strong and what each spear size is worth, which is why asparagus is one of the items buyers should price rather than assume.

Spear Size Is a Choice, Not a Grade

Jumbo spears are meant to be peeled and belong in plated and grilled applications where the spear is the dish. Large and standard are the general-purpose sizes. Pencil asparagus cooks in under two minutes and is right for sautés, frittatas, salads and anything chopped. Buying jumbo for a chopped application wastes money; buying pencil for a plated entrée wastes the plate.

Selection

Tips should be tight and dry, not flowering or wet. Stalks should be firm and straight with a bright green color running well down the spear, and the cut end should look freshly trimmed rather than dried and split. Uniform diameter within a bunch matters for even cooking.

Storage

Asparagus is a cut stem and behaves like one. Trim the butt end, stand the spears upright in an inch of cold water, cover loosely and hold at 34–38°F. Stored flat and dry it loses sugar and turns woody within days; stored upright and cold it holds most of a week with tight tips.

Cooking Notes

Snap one spear to find the natural break point, then cut the rest to that length rather than snapping each one, which wastes edible stalk. Peel jumbo spears from just below the tip. Blanch and shock for cold applications; roast or grill hot and fast for hot ones.

An excellent source of vitamin K and folate, with vitamin A, vitamin C, fiber and potassium. Fat free, cholesterol free and very low in sodium.
