Wholesale Baby Carrots
There are two completely different products sold as baby carrots, and buyers should be explicit about which one they want. True baby carrots are harvested young, often with the tops still attached, and are tapered, sweet and tender. Baby-cut carrots are mature carrots machine-cut and tumbled into uniform cylinders. Both have a place; they are not substitutes.

Selection and Storage
For topped carrots, judge the greens first — they wilt long before the root does, so limp tops mean the bunch is older than it looks. The root should be firm with smooth skin and no cracking. Remove the tops before storing; they pull moisture out of the carrot and soften it within days. Hold roots at 34–38°F with high humidity and expect two to three weeks. Store away from apples and other ethylene producers, which make carrots turn bitter.
In the Kitchen
Baby carrots roast whole with almost no prep, which is their entire economic argument. High heat and a small amount of fat concentrate their sugar; glazing with butter and a little acid at the end is the classic finish. Rainbow varieties should be roasted separately from orange where color matters, since purple pigment bleeds.
Nutrition
Carrots are an outstanding source of vitamin A from beta carotene, and provide fiber, vitamin K and potassium. Fat free, cholesterol free and low in sodium.
