Picked at that stage they are sweeter, more tender and far more uniform than a downsized mature crop, which is exactly what a plated menu or a retail tray needs. Uniformity is the whole point of the category. A chef plating twelve covers a minute cannot stop to sort; a retail buyer cannot merchandise a tray where half the pieces are twice the size of the rest. We buy from growers who grade tightly and we hold that spec across the season.

They cut labor. A baby carrot roasted whole with the top trimmed replaces peeling, cutting and turning; a baby squash halved is a finished garnish. Storage and Rotation
Hold baby vegetables at 34–38°F with high humidity and keep them out of direct airflow, which dehydrates thin skins fast. Baby squash with blossoms attached is the most fragile item in the category and should be used within two to three days of receipt; baby beets and baby carrots will hold well over a week when stored properly.
