Wholesale Fresh Baby Corn
Almost all baby corn in American kitchens arrives in a can, and almost all of it tastes like the can. Fresh baby corn is a different vegetable: sweet, crisp, faintly grassy, and firm enough to stay crunchy through a hot wok. It is harvested young from ordinary corn plants, before pollination, when the whole ear is tender enough to eat cob and all.
Shucked and Ready
We supply baby corn shucked, so there is no husk to strip and no silk to pick — it goes from case to pan. That matters, because hand-shucking baby corn is one of the most tedious prep jobs in a kitchen and is where the fresh version usually loses to canned on labor cost.
Selection and Storage
Look for pale ivory-to-yellow ears with tight, even kernel rows and firm, unwrinkled tips. Browning at the tip is the first sign of age. Hold at 34–38°F with high humidity and use within five to seven days; like sweet corn, baby corn converts sugar to starch as it ages, so fresher is measurably sweeter.
In the Kitchen
Fresh baby corn is excellent raw on crudité platters, where its crunch and shape do real visual work. Cooked, it wants speed and high heat: stir-fries, blistering in a hot pan, quick pickling, or grilling whole. Long cooking turns it soft and pointless. Whole ears plate better than cut ones.
Nutrition
Baby corn is low in calories and provides fiber, folate, vitamin C and small amounts of iron. Fat free, cholesterol free and very low in sodium.
