Wholesale Baby Squash
Baby squash is one of the few vegetables that arrives already looking like a finished garnish. Halved and seared, or roasted whole, it needs almost nothing done to it, which is why it appears on so many plated menus and so few high-volume ones — the value is in presentation, not in yield.
Types We Carry
- Baby zucchini — slender, dark green, often with the blossom still attached.
- Baby sunburst — bright yellow, scalloped, the strongest color on the plate.
- Baby patty pan — flying-saucer shaped, pale green or yellow, ideal halved.
Blossoms Attached
Baby squash with the blossom still on is the most fragile item in the category and the most striking. The blossom bruises and closes within days, so it should be ordered only when it will be used within two to three days of receipt. If the blossom is not part of the presentation, order without it and gain shelf life.
Selection and Storage
Look for firm, glossy skin with no soft spots or shriveling at the stem end. Baby squash is thin-skinned and dehydrates fast. Hold at 40–45°F with high humidity and out of direct airflow — colder than that causes pitting and chilling injury. Expect four to seven days.
Cooking Notes
Baby squash is mostly water and will steam itself into mush if crowded. Cook it hot and fast in a single layer, or grill it halved cut-side down. It needs salt and acid at the end to taste like anything; its own flavor is mild by design.
Nutrition
Low in calories, with vitamin C, vitamin A, potassium and fiber. Fat free, cholesterol free and very low in sodium.
