Wholesale Snow Peas
Snow peas are flat, translucent pods harvested before the peas inside develop. The whole pod is eaten, raw or cooked, and the appeal is texture: a clean snap and a sweet, grassy flavor that survives high heat better than most vegetables in a stir-fry.
Snow Peas Versus Sugar Snaps
Snow peas are flat, thin-walled and eaten mostly for the pod. Sugar snap peas are round, plump and eaten for both pod and pea. They are not interchangeable in a dish — a stir-fry built on snow peas will read heavy and sweet if snaps are substituted, and a crudité platter built on snaps will look flat with snow peas.
Selection
Look for flat, bright green, glossy pods with barely visible peas inside and no swelling. Swollen pods have been picked late and will be tough and starchy. Pods should snap rather than bend, and there should be no yellowing or water-soaked spots.
Storage
Hold at 40–45°F with high humidity in ventilated packaging. Below 40°F, chilling injury produces rusty pitting that appears two days later. Expect five to seven days.
Prep and Cooking
String them — pull the tough fiber from the straight edge, which takes seconds and makes a real difference. Cook them fast and barely: sixty to ninety seconds in a hot wok, or a thirty-second blanch and shock for cold applications. Anything longer and they go limp and grey-green.
Nutrition
An excellent source of vitamin C and vitamin K, with folate, fiber, iron and protein. Fat free, cholesterol free and very low in sodium.
