French beans and snap peas are the two vegetables most likely to appear on both a fine-dining plate and a retail steam bag, which makes them one of the most useful lines in a specialty program. Harvest Sensations distributes them nationwide from Miami and Los Angeles, in bulk cases and in retail packs.

French Beans Versus Green Beans

They are not the same vegetable at a different size. French beans are a distinct type bred to stay slender, tender and stringless, harvested young so the seed inside never develops. A green bean picked small is still a green bean: tougher skin, visible seed, more chew. If a menu says haricots verts, a small green bean will not pass, and buyers should price the two separately.

Handling

Hold beans and peas at 40–45°F with high humidity. Colder than that causes chilling injury and rusty pitting that shows up two days later, usually after the case has been accepted. Keep them dry, keep the case ventilated, and blanch and shock rather than holding cooked product warm — both items go from bright green to army green in minutes on a steam table.
