Sugar snaps are a cross between garden peas and snow peas, bred so that both the pod and the peas inside are sweet and edible. They are the most snackable vegetable in the category — retailers sell them as a grab-and-go item, and caterers use them raw on crudité platters where they outsell carrots and celery.

Selection

Look for plump, firm, bright green pods that are full but not bursting, with a squeaky feel and an audible snap. Dull, limp or yellowing pods are old. Very large, tight pods have gone starchy — the sugar converts as they mature on the plant.

Storage

Hold at 40–45°F with high humidity, ventilated, never below 40°F. Sugar converts to starch faster at warm temperatures, so a snap pea held at room temperature loses its defining sweetness within hours. Expect five to seven days refrigerated.

Stringing

Most sugar snap varieties have a string along the seam that should be pulled before serving — snap the stem end and draw it down the pod. Stringless varieties exist but are not universal, so check on arrival rather than assuming.

In the Kitchen

Best raw or barely cooked. Whole on crudité platters and in lunch boxes, blanched thirty seconds and shocked for salads, blistered in a hot pan with garlic, or split lengthwise so the peas show, which is one of the better cheap garnishes in produce.

Nutrition

An excellent source of vitamin C and vitamin K, with fiber, folate, iron and plant protein. Fat free, cholesterol free and very low in sodium.
