Blackberries sit between blueberries and raspberries on every axis that matters to a buyer: more fragile than a blueberry, sturdier than a raspberry, and the most visually dramatic of the three on a plate or in a clamshell. They are also the berry where a small drop in handling quality shows up fastest as leakage.

What Quality Looks Like

Look for large, plump, glossy black fruit with the drupelets intact and no red patches. Red shoulders mean underripe and sour — blackberries do not sweeten after picking. Dull, matte fruit is older. Any red juice staining the bottom of the clamshell means fruit has already broken down inside.

Storage

Hold at 32–34°F. Do not wash before storing. Keep clamshells to a maximum of two high and inspect from underneath. Blackberries are hollow-cored and crush from their own weight faster than blueberries, so deep stacking is the most common cause of loss.

The Core Tells You Something

A blackberry picked ripe pulls away from its core and is hollow; a berry with the white core still inside was picked too early, taken from the wrong stage, and will be sour. It is a quick, reliable check on arrival.

In the Kitchen

Whole on desserts, cheese boards and cocktails where the size is the point; cooked down into coulis, jam and sauces for game and duck, where the seeds are strained out. In pastry they hold their shape in tarts better than raspberries do.

Nutrition

An excellent source of vitamin C, vitamin K, manganese and fiber — among the highest-fiber fresh fruits — with anthocyanins. Fat free, cholesterol free and sodium free.
