Blueberries are the anchor of any berry program: they hold longer than raspberries or blackberries, they ship better, and demand does not fall off in the winter the way it does for other berries. That makes them the item worth building continuity around, from the domestic summer crop through the South American import window.

What Quality Looks Like

Look for the bloom — the dusty silver-grey film on the skin. It is a natural wax the fruit produces and it is a reliable freshness indicator; rubbing it off shortens shelf life. Berries should be plump, uniformly deep blue with no red or green shoulders, and dry. Red on a blueberry means it was picked short.

Storage

Hold at 32–34°F, which is colder than most walk-ins actually run. Never wash before storage. Never stack clamshells more than two high — the bottom layer crushes and a single leaking berry starts mold that moves through the pack. Check the underside of the clamshell, not the top.

Blueberries Do Not Ripen After Picking

Whatever sugar the fruit has at harvest is all it will ever have. Softening is not ripening; it is decline. This is why sourcing and harvest timing matter more for berries than for almost any other category, and why a cheap lot is usually cheap for a reason.

In the Kitchen and at Retail

Blueberries freeze better than any other fresh berry with almost no structural loss, which makes them the practical choice for bakery and beverage programs. At retail they are the volume driver of the berry set and respond strongly to multi-pack promotion.

Nutrition

An excellent source of vitamin C, vitamin K and manganese, with fiber and the anthocyanins that give the fruit its color. Fat free, cholesterol free and sodium free.
