Raspberries are the most fragile item in fresh produce and the one that rewards good handling most visibly. A raspberry is a cluster of tiny fruit around a hollow core, with skin thin enough to bruise from its own weight. Everything about buying them is a question of how fast they got cold and how gently they were moved.
What Quality Looks Like
Bright, uniform color with a slight sheen, firm individual drupelets, and a dry surface. Any wet look, any darkening, any juice at the bottom of the clamshell means breakdown has started. Mold on raspberries spreads faster than on any other berry — one affected fruit can take a pack in a day.
Storage
Hold at 32–34°F and use fast. Two to three days is a realistic working life, not a week. Never wash before storage. Never stack. Keep them at the front of rotation, always.
Buying Them Sensibly
Order raspberries to actual usage on a two-day cycle rather than to a comfortable par. Over-ordering raspberries is not a small inefficiency — it is the single most common source of produce shrink in a dessert or bar program. When a growing region gets rain, quality drops and price rises at the same time, which is exactly the week to pull them from a special.
In the Kitchen
Whole and raw wherever possible — on desserts, in cocktails, on cheese boards. Cooked, they break down into coulis and sauces quickly, and freezing works well for that purpose even though frozen fruit is useless for garnish.
