Wholesale Microgreens
Microgreens are seedlings harvested at the first true-leaf stage, roughly one to three inches tall. At that point the plant carries a concentrated version of its mature flavor in a fraction of the volume, which is why a pinch of micro cilantro reads louder on a plate than a whole sprig of the full-grown herb.
Mixes We Carry
- Micro rainbow mix — multiple colors and leaf shapes, the standard plating garnish.
- Micro intensity mix — brassicas and mustards with real bite, for cutting through fat.
- Micro cilantro — clean and precise, for Latin and Asian plates.
- Micro mint — for desserts, cocktails and cold dishes.
- Micro hearts on fire — pink-stemmed and peppery, one of the strongest visual micros.
Not the Same as Sprouts
Sprouts are germinated in water and eaten root and all; microgreens are grown in a medium under light and cut above the soil line. They are a different product with a different flavor profile and different handling, and the two should not be substituted for each other on a spec.
Storage
Hold at 38–40°F in the clamshell, closed, away from direct airflow, with nothing stacked on top. Do not wash before storing — surface moisture is the main cause of loss. Expect five to seven days for most mixes and less for the softest ones.
Using Them Well
Micros go on at the last second, off the heat, always dry. Dress them with the barest film of oil if at all; a wet dressing collapses them instantly. Used as a flavor component rather than only as decoration — micro cilantro folded into a salsa, micro mustard on a rich terrine — they earn their cost.
