Squash blossoms are a genuine seasonal luxury: available in real volume only part of the year, usable for a day or two after arrival, and completely distinctive on a menu. Kitchens that run them well treat them as a special rather than a fixed item, and order to the cover count rather than to a par.

Male and Female Blossoms

Male blossoms grow on a thin straight stem and are the ones normally harvested for cooking, since removing them does not cost the plant a fruit. Female blossoms come attached to a tiny squash and appear on plated menus where that baby squash is part of the presentation. Ask which you are getting if the dish depends on it.

Selection and Storage

Look for blossoms that are still open or just closing, bright orange-yellow, with no browning at the petal tips and no wilting at the stem. Hold at 38–40°F in a single layer, in the container they arrived in, and do not stack anything on top. Plan on one to three days. This is not an item to hold over a weekend.

Prep

Remove the stamen or pistil from inside, check for insects, and do not wash unless necessary — water collapses the petals. If they must be rinsed, dip briefly and drain upside down.

In the Kitchen

The classic is stuffed with ricotta or queso fresco, battered and fried. They also go into quesadillas and soups in Mexican cooking, into risotto and pasta in Italian cooking, and can be served raw, torn over a salad, where the flavor is faintly squash-like and sweet.
