Wholesale Fresh Rosemary

Rosemary is the most durable herb on a produce order and the easiest to under-order because of it. It holds for two weeks or more, it ships without drama, and it does double duty as both an ingredient and a garnish — a long straight sprig standing in a cocktail or laid across a roast is doing plated work no other herb can.

Selection

Look for firm, straight woody stems with dense, silvery-green needles that stay attached when the sprig is handled. Needle drop is the first sign of age. Dark, blackened tips mean the sprig has been held wet or crushed in the case.

Storage

Hold rosemary at 34–40°F, loosely wrapped, with some air movement. Unlike soft herbs it does not want to stand in water, which softens the stems and encourages mold at the base. Kept dry and cold it will hold two to three weeks with almost no loss.

Using Rosemary Without Overpowering the Dish

Rosemary is high in camphor and pine notes and it does not fade with cooking the way soft herbs do — it intensifies. The usual mistake is treating it like parsley. Use whole sprigs that can be removed, or chop finely and use roughly a third of what a recipe would call for in basil or parsley. It pairs naturally with lamb, potatoes, white beans, focaccia, roasted chicken and citrus.

Beyond the Plate

Woody rosemary stems make excellent skewers for grilling, and rosemary is one of the few herbs that infuses well into syrups, oils and spirits for bar programs, where the sprig also functions as the garnish.

Rosemary provides vitamin A, vitamin C, calcium and iron in culinary quantities, and is fat free, cholesterol free and sodium free.
