Wholesale Beech Mushrooms
Beech mushrooms, also sold as shimeji or bunapi and buna shimeji, grow in tight clusters of small-capped mushrooms on slender stems. They are the most uniform mushroom in the specialty category, which makes them unusually easy to portion and plate.
Brown and White
Brown beech has a slightly nuttier, more pronounced flavor; white beech is milder and visually cleaner on a light-colored plate. Both have the same firm, almost crunchy bite that survives high heat and liquid better than most cultivated mushrooms.
Selection
Look for tight, upright clusters with firm caps and no darkening or sliminess at the base. The cluster should feel dry and springy. Separated, floppy stems mean the product is old.
Storage
Hold at 34–38°F in the original packaging with ventilation. Beech mushrooms hold seven to ten days. Trim the base of the cluster just before use, not before storage — cutting the base early accelerates spoilage.
Cooking Notes
Beech mushrooms are noticeably bitter raw and must be cooked. Two to three minutes of real heat removes the bitterness entirely and brings out a sweet, nutty flavor. They are ideal in hot pot, ramen, stir-fry, cream sauces and as a sautéed garnish, where the intact cluster shape is part of the presentation.
