Specialty mushrooms have moved from garnish to center of the plate, and the volume has followed. Harvest Sensations distributes cultivated specialty mushrooms year-round to restaurants, retailers and foodservice distributors, with the steady supply and predictable sizing that wild-foraged product cannot give a menu.

Because our mushrooms are grown indoors under controlled conditions, availability does not disappear when the weather turns. That matters if a mushroom is printed on your menu or planogram: you can commit to it in January the same way you can in September.

Mushroom Varieties We Distribute

  • King Oyster — thick, meaty stems that slice into scallops and steaks.
  • Maitake — feathered clusters that crisp at the edges and stay tender inside.
  • Shiitake — the workhorse umami mushroom for stocks, stir-fry and plant-forward menus.
  • Beech — brown and white clusters with a firm bite and nutty finish.

Cultivated mixed packs are also available when a kitchen wants variety without carrying four separate SKUs.

Handling Notes for Buyers

Mushrooms are mostly water and they breathe. Keep them at 34–38°F in their original ventilated packaging, never sealed in plastic, and never washed until the moment of use. Rotated properly, specialty mushrooms will hold a week or more; sealed wet, they will slime in two days. We pack and ship to protect that, and we will tell you where in the week a lot sits so you can rotate around it.

They carry menu margin. A king oyster scallop or a roasted maitake plate reads as premium and costs a fraction of the protein it replaces, which is why plant-forward and flexitarian menus lean on them so hard.
