The king oyster, also sold as king trumpet or trumpet royale, is the mushroom that made mushroom-as-protein credible. Almost all of its mass is a thick, dense white stem with the texture of a scallop, and it holds that texture through searing, roasting and grilling in a way no other cultivated mushroom does.

Why Kitchens Buy It

Cut crosswise into thick coins and scored, it sears into a convincing scallop substitute. Torn lengthwise it pulls into strands for pulled-mushroom applications. Roasted whole it plates as a center-of-plate item. For a plant-forward menu, it is the highest-value mushroom per dollar because there is essentially no trim loss — the whole mushroom is usable.

Selection

Look for firm, heavy stems with dry, unblemished white surfaces and small tan caps. Softness, wrinkling or a slippery film means the mushroom is past. Larger diameter stems are worth paying for if the application is scallops; smaller ones are fine for slicing and stir-fry.

Storage

Hold at 34–38°F in the original ventilated packaging. Never seal mushrooms in plastic and never wash them before storage — trapped moisture is what turns them slimy. King oysters are the longest-holding specialty mushroom and will keep seven to ten days or more when stored properly.

Cooking Notes

Dry heat and patience. King oyster releases little water compared to a button mushroom, so it browns rather than steams, but it needs real heat and space in the pan. Salt at the end; salting early draws out moisture and prevents the crust.

A good source of B vitamins including riboflavin and niacin, plus potassium, selenium and fiber. Naturally fat free, cholesterol free and very low in sodium.
