Maitake, sold in English as hen of the woods, grows in feathered, overlapping clusters rather than as individual mushrooms. Those ruffled edges are the point: they crisp aggressively under high heat while the base of the cluster stays tender, giving one piece two textures.

Cultivated, Not Foraged

Wild maitake is a genuine autumn seasonal item with unpredictable supply. Cultivated maitake — what we distribute — is available year-round with consistent cluster size and clean, grit-free fronds, which is what a menu commitment actually requires.

Selection

Look for firm, dry clusters with well-defined grey-brown fronds and a clean earthy smell. The cluster should feel light but hold together when lifted. Darkening, sogginess at the base, or fronds that crumble apart indicate age.

Storage

Hold at 34–38°F in ventilated packaging, never sealed, never washed before storage. Maitake holds five to seven days. Because the fronds are delicate, do not stack weight on top of the clusters.

Cooking Notes

Tear clusters by hand into serving-size pieces rather than cutting — the torn surface catches oil and crisps better. Roast at high heat or sear hard in a dry pan first, then add fat. Maitake also fries exceptionally well in tempura, where the ruffles trap the batter.

Nutrition

Maitake is a source of B vitamins, fiber and beta-glucans, and is one of the few foods that produces meaningful vitamin D when exposed to UV light. Fat free, cholesterol free and very low in sodium.
