Watermelon radish is a heirloom daikon type that is unremarkable on the outside — pale green and white, roughly the size of a small turnip — and startling on the inside, with a magenta core that reads as a design choice rather than a vegetable. It has become a standard plating item for exactly that reason.

Flavor

Milder and sweeter than a red radish, with a gentle peppery finish rather than a bite. That makes it usable in quantity: a plate can carry several slices without the dish turning aggressive.

Selection and Storage

Look for firm, heavy roots two to four inches across with taut skin and no cracks. Very large roots go pithy and lose color intensity. If tops are attached they should be crisp; remove them before storage. Hold at 34–38°F with high humidity and expect two to three weeks.

Getting the Color to Show

The color is in the flesh, so the cut decides everything. Slice crosswise, thin, on a mandoline for full circles that display the ring pattern. Cook it and the magenta fades toward brown, so this is fundamentally a raw or lightly pickled item. A quick vinegar pickle actually intensifies the color and holds it.

In the Kitchen

Shaved raw over salads, grain bowls and crudo; quick-pickled for tacos, banh mi and rice bowls; cut into wedges with butter and salt; or used as a color element on cheese and charcuterie boards.

Very low in calories, with vitamin C, folate, potassium and fiber. Fat free, cholesterol free and low in sodium.
