Root vegetables are the quiet backbone of a specialty program. They ship well, they hold for weeks rather than days, and they cross more cuisines than almost anything else on a produce order — ginger and daikon into Asian kitchens, yuca and malanga into Caribbean and Latin menus, jicama and watermelon radish into salads and raw bars.

Storage That Actually Extends Shelf Life

Roots want cold and dark, but not the same cold. Ginger and turmeric hold best around 55°F and turn translucent if stored at refrigeration temperature for long. Yuca is the opposite — it degrades within days of being cut unless it stays waxed and cool. Beets, radish, daikon and celery root are happy at 34–38°F with high humidity. Storing the whole category at one temperature is the most common reason roots underperform their expected life.
