Baby heirlooms give a kitchen everything the full-size heirloom gives — color, flavor, the premium read on a plate — without the two things that make full-size heirlooms hard to run: inconsistent portioning and rapid bruising. They are the more practical item for high-volume operations, and often the better-selling one at retail.
What Is in a Mixed Pack
Typically a blend of red, yellow, orange, green-striped, purple and brown cherry and grape types, in varying shapes. Sweetness varies by color, which is part of the appeal — a single spoonful of a mixed pack tastes like several different tomatoes.
Selection and Storage
Look for taut, glossy skin, no splitting, and stems still green if attached. Splitting is caused by irrigation swings and it spreads fast in a pack. Hold at 55–60°F, not refrigerated, in shallow layers. Expect five to seven days.
In the Kitchen
Halved into salads and grain bowls, skewered whole, blistered whole in a hot pan until the skins split, roasted slowly with garlic and oil, or served whole on a crudité or antipasti board. Blistering is the highest-return technique: two minutes of heat concentrates the sugar and turns a garnish into a sauce.
Nutrition
An excellent source of vitamin C and lycopene, with vitamin A, potassium and fiber. Fat free, cholesterol free and low in sodium.
