Wholesale Heirloom and Specialty Tomatoes

Tomatoes are where a produce program either looks serious or does not. A commodity round tomato is a filler; an heirloom on a plate is a menu item that guests order by name. Harvest Sensations distributes specialty tomatoes to restaurants, hotels and premium retail nationwide, from our Miami and Los Angeles facilities.

Specialty tomatoes are graded on flavor and color break as much as on size, which means they need a supplier who actually looks at the fruit. We receive, grade and rotate tomatoes in house rather than cross-docking them blind.

Never Refrigerate a Whole Tomato

Below about 55°F, the enzymes that produce tomato aroma shut down and do not restart. That is the single biggest reason a good tomato tastes like nothing by the time it reaches the plate. Hold whole tomatoes at 55–60°F, out of direct light, stem-side down, and only refrigerate after cutting. Heirlooms in particular bruise under their own weight, so keep them to a single layer.

Menu and Merchandising Notes

Heirlooms sell on color, so a mixed-color pack outperforms a single-variety pack on both a plate and a retail table. Keep the cut simple — thick slices, flaky salt, good oil — because the fruit is doing the work. For retail, heirlooms carry the highest ring in the tomato set and lift the whole category when merchandised at the front of it.
