Sun-dried tomatoes are the one item in a specialty tomato program that does not fight the clock. Shelf stable, intensely concentrated, and available in two formats that serve very different applications, they belong on the order as a pantry backstop as much as an ingredient.

Halves or Julienne

Halves are the display and plating format — visible pieces in an antipasti spread, on a board, or as a component in a sandwich. Julienne is the volume format: already cut, disperses evenly into sauces, pasta, doughs, spreads and fillings, and removes a prep step. High-volume kitchens and manufacturers buy julienne almost exclusively.

Dry-Packed Versus Oil-Packed

Dry-packed tomatoes are leathery and need rehydrating in warm water, stock or wine for fifteen to thirty minutes before use — and that soaking liquid is worth keeping, since it carries a great deal of flavor. Oil-packed tomatoes are ready to use and the oil itself becomes a seasoned ingredient. Dry-packed stores longer and ships cheaper.

Storage

Dry-packed tomatoes hold in a cool, dark, dry place for many months in sealed packaging, and longer refrigerated. Once opened, transfer to a sealed container away from humidity. Oil-packed product should be refrigerated after opening and the tomatoes kept submerged in the oil.

In the Kitchen

Pesto, cream sauces, focaccia and bread doughs, tapenade, sandwich spreads, pasta, risotto and grain salads. Because the flavor is concentrated and salty, they need less added salt than a recipe usually suggests.

Nutrition

A concentrated source of lycopene, potassium, iron and fiber. Naturally fat free when dry-packed and cholesterol free; sodium content varies by pack, so check the spec.
